A restaurant in Madrid de los Austrias with the most traditional tapas and the best dishes of Spanish food

Here it all started

After the great fire of 1790, the Architect Juan de Villanueva reorganized the Plaza Mayor and created a series of accesses to it, being one of the most important, due to its height and magnificence the Bow of Knives. Next to it, in the heart of the city, dozens of workshops dedicated to this trade, that of the knife makers, that supplied items to the butchers’ guild, located inside the Plaza Mayor itself, emerged. These small establishments ended up giving name to a street, continuation of the Cava de San Miguel and called Cuchilleros.

Although the arch and the reorganization of the accesses dated from the end of the 18th century, most of the buildings that made up the square already existed before. After the fire they were simply reformed and adapted to obtain a homogeneous composition facing the square itself, where they were all unified, not being outside of it.

This can be seen in the Cava Baja de San Miguel, which is composed of dozens of buildings of different heights and shapes. All have a common denominator, and that served as a buttress to the square itself, which extends meters higher, forming a barrier. That is why all these buildings are much wider at their base, creating a very unique curve on their facades, which can be clearly seen from the corner of the Cuchilleros Arch towards the Plaza Mayor.

Nestled in one of those buildings that surrounds the Cuchilleros arch, in a privileged place, is the Rincon de Cuchilleros restaurant. After having different uses, in the 19th century it becomes a food house, which soon becomes one of the most famous in the place: “El Rincón”.

Over the years it was renamed the “Mesón del Verdugo” or “Casa Avelino, Pan y Vino”, and was famous for the excellent food that was cooked in its burners, as well as in its large wood oven.

But perhaps the greatest secret was yet to be revealed, in the mezzanine a beautiful vaulted ceiling is discovered, the type that is very frequent in the basements of the buildings of the old town. This corresponds to an old cave in the building on the street after Toledo. Today that basement has become u the most pleasant, intimate and sought after rooms of the restaurant.

At the bottom of this, behind an old fence, a large collection of wines with which to accompany a delicious evening is guarded.

Any of the many and different corners of this magnificent restaurant, reminds us of past times, where the three hundred years of history of its walls merge with avant-garde details, but always respecting the heritage of this city open to the world, which is Madrid.
